Meet Dr. Carolyn Williams
Today we sat down with Dr. Carolyn Williams and discussed what is causing inflammation in all of us. She’s a dietitian, a nutritionist and an award winning journalist who started off her amazing career working at a publishing house for cookbooks. She moved on to teaching at a junior college while continuing to do freelance writing when she realized she enjoyed her writing career more than her teaching career. So she dove into her cookbooks full time while also looking for healthy and quick dinner options.

Her “AH HA!” moment came to her while on a vacation she had taken for some time to relax. That was when it became apparent to her that inflammation was behind everything.

Inflammation
Inflammation is at the root of just about all of our health issues. Low energy, joint pain, digestion issues, and believe it or not, even mental conditions are a sign of some level of inflammation. It’s a physical condition that irritates the lining of your body and has many different levels of severity. But, it’s a silent monster when it comes to your health and should be addressed as soon as possible to avoid it becoming an even bigger issue.
Don’t let the little things go
There isn’t always a major red flag when inflammation is occurring in your body. It’s like a low grade fire that makes your body more irritated and hypersensitive. It could be as simple as a recurring headache, or gaining just a couple extra pounds that you think you’ll just work off next week. Really, anything out of the norm should be an indication that something is off. No ailment just shows up out of the blue, there’s always smaller signs and symptoms. But are you listening to your body?
Breaking it down
The best way to find what’s causing your inflammation will not be easy but it is doable. It’s called an “Elimination Diet” wherein you cut pretty much everything out of your diet, then slowly and one at a time reintroduce foods. After a certain food, be it dairy or gluten or whatever, causes you discomfort, then you’ve found your culprit. And you can keep going to see what other foods cause your body discomfort. Dr. Williams suggests adding three anti inflammatory things to your diet first. Leafy greens, berries and cruciferous veggies (the smelly kind), should be added first. Then, start taking the other food out to figure out what isn’t agreeing with your body.
